"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
1 15-oz can garbanzo beans, drained (reserve liquid)
1/4 cup tahini
1 - 2 garlic cloves, minced
3 TB lemon juice
1/4 tsp salt
olive oil, as needed

Directions:
Directions:
Place all ingredients in food processor or blender. (Food processor is easier.) Process on high until the hummus is smooth. Taste and adjust seasonings if needed. Add more salt, garlic, or lemon juice. Add in some of the reserved liquid or olive oil. Scrape the sides of the processor or blender and continue processing until smooth. Consistency should be thick but spreadable. If you get it too thin, add more garbanzo beans.

Keep refrigerated.

Use hummus in place of mayonnaise on sandwiches for added flavor, as a dip with chips, or just eat it with a spoon. It's that good!

Personal Notes:
Personal Notes:
There is a Lebanese restaurant in Fort Worth that we went to for special occasions such as birthdays or anniversaries. Their hummus was divine and I tried to make it. I never made it just like theirs, but this comes close.
