16.25 oz. box lemon cake mix
3.4 oz. pkg. instant lemon pudding mix
1/2 pkg. lemon jello
4 eggs
3/4 cup oil
3/4 cup water
1 tbsp. lemon juice
1 tsp. lemon rind
1/2 tsp. lemon extract

Glaze:
1 tbsp. water
2 tbsp. melted butter
1/3 cup lemon juice
1 tsp. lemon jello
1/2 tsp. lemon rind
2 cups powdered sugar

Cake: In a large bowl, mix together all the ingredients; beat well. Pour into greased 9x13-inch baking pan. Bake in a preheated 350º oven for 35 to 45 minutes or until a toothpick inserted in the center comes out clean. Glaze: Mix together all the ingredients until smooth. Poke holes all over the cake with a fork to allow glaze to soak into cake. Pour the glaze over the warm cake and serve.

Mom made this sweet/tart lemon cake often. It was easy to make and so moist. Our family always enjoyed it and as good as it was, it tasted even better on the second day!
