1/2 cup shortening or margarine
1/2 cup unsalted butter, softened
3/4 cup sugar
3/4 cup dark brown sugar, firmly packed
2 eggs
3.4 oz. pkg. vanilla instant pudding
1 tbsp. vanilla extract
1 tsp. baking soda
1 tsp. water
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 cup old-fashioned oats
2 1/4 cups flour
1 cup raisins
1 1/2 cups chopped walnuts

Directions:
Directions:
In a large bowl, beat vegetable shortening and unsalted butter until fluffy. Gradually add white and brown sugars and cream together. Add eggs, one at a time, beating well after each addition. Add vanilla pudding mix, vanilla extract, baking soda, water, ground cinnamon, ground nutmeg and salt; mix well. Add in oats, then flour. Stir in raisins and walnuts. Drop cookie dough by heaping tablespoons onto parchment-lined cookie sheets, spacing 2 inches apart. Bake in a preheated 375º oven until cookies appear dry and tops are lightly cracked, about 12 minutes. Do not over bake.

The pudding in this recipe takes these cookies to the next level. If I am making them during the holidays, I can sometimes find the Pumpkin Pie instant pudding mix (Jello brand makes it) and I will substitute that for the vanilla...OMG!
