2 pounds ground beef, or beef ground for chili
1 8-oz can tomato sauce
2 cups water
2 teaspoons paprika
4 teaspoons cumin
1 Tablespoon dried onion flakes
1/4 teaspoon garlic salt
1/2 cup chili powder
1 teaspoon ground red pepper
2 tablespoons masa harina flour
1/4 cup hot water

Directions:

Brown beef in a Dutch over; drain.

Add tomato sauce, water, paprika, cumin, onion flakes, garlic salt, chili powder, and ground red pepper. Cover and simmer for 30 minutes, stirring occasionally.

Dissolve 2 tablespoons masa harina flour into 1/4 cup hot water to make a thick, but pourable mixture.

Add masa mixture to chili. Cover and simmer another 15 - 20 minutes.

This also works well in a crockpot. Put all ingredients except the masa flour and the 1/4 cup hot water into a crockpot and cook on low for 8 - 10 hours. About 30 minutes before you are ready to eat, turn crockpot to high. Dissolve 2 tablespoons masa harina flour into the 1/4 cup hot water to make a thick, but pourable mixture and add to crockpot. Stir well. Cover and simmer for about another 30 minutes.

I used to buy the packets of 2-Alarm Chili and make it when we lived in Texas. I found this recipe where someone had measured out the different packets of ingredients, so this is how I make it now. It is quite spicy, so if you want 1 alarm chili, use only 1/2 teaspoon of red pepper, or leave the red pepper out completely for no alarm.

If you can't find beef ground for chili, ask the butcher to grind some for you. It is a coarse ground beef and makes great chunky chili. I actually cook my chili longer than this recipe, so check and see what you like.

Also, the answer is "Yes, you do need the masa harina flour. Regular flour just will not work well for this." Check the ethnic aisle and just buy the smallest bag you can. Freeze the flour and you will have plenty for a long time.
