20 large fresh mushrooms
2 Tbls melted butter

1/2 cup butter
1/2 cp of the dry stuffing from a box of stuffing
1 tsp of the box stuffing seasoning
1 clove garlic, peeled and minced
pepper to taste
1/4 cp water

4 oz cream cheese, softened
1/2 pound imitation crabmeat, flaked

3/4 cp shredded mozzerella

Directions:
Preheat oven to 350*. Place all mushroom caps in a large bowl. Dice the mushroom stems until you have 1 cp of them. Drizzle the caps with 2 Tbls of melted butter and toss to coat them evenly.

In a 10" frying pan melt the butter and saute the mushroom stems for 3 min over med heat. Reduce to low and add the dry stuffing, 1 tsp of the stuffing seasoning, garlic, pepper and water. Let it sit for 2 min or till the water is absorbed into the stuffing. Add the cream cheese in small pieces and stir until well blended.

Remove from heat and add the crab meat, gently toss just till it's evenly mixed throughout. Liberally stuff mushrooms with the mixture and place in a small baking dish. Top with the mozzarella cheese. Bake uncovered in the preheated oven 10 to 12 minutes, or until stuffing is lightly browned.

I've tried several stuffed mushroom recipes and this is the only one that I like. Coating the caps in a little butter keeps them from getting dry and shriveled.
