4 cups Bisquick or Jiffy baking mix
3 jumbo Eggs, beaten
2 1/2 cups Club Soda, room temperature
1/4 cup Margarine, melted
Vegetable Oil

Directions:
Directions:
Place dry baking mix in large bowl. Add the eggs, club soda and melted margarine. Use wire whisk to mix carefully until no lumps remain (not vigorous though). Allow batter to rest while you preheat your skillet over med-high heat. Add vegetable oil to pan and cook pancakes until done flipping only once when bubbles appear.

This is a great recipe to make ahead of time and then freeze individual pancakes - they are great to put in the toaster for a quick breakfast!
