2 1/2 cups flour
2 tsp. cornstarch
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 cups sugar
2 tsp. lavender
1/2 cup unsalted butter, softened
6 tbsp. vegetable shortening
1 egg plus egg yolk
6 oz. good quality white chocolate chips
medium coarse sea salt for sprinkling

Directions:
Directions:
In a small bowl, combine flour, cornstarch, baking soda and salt; set aside.
In a food processor or blender, process the lavender and sugar for about 10 to 20 seconds until the lavender is chopped into fine pieces and the sugar is well-incorporated. In another bowl, beat the butter, shortening and lavender/sugar at medium speed for 3 minutes. Add in the egg and egg yolk and beat for 3 more minutes until fluffy. Add the flour and white chocolate on low speed until combined. Scoop heaping tablespoons onto parchment-lined cookie sheets and put into the freezer for 15 minutes. Take out of the freezer and bake in a preheated 375º oven for 12 minutes. They should look a little underdone, but take them out and sprinkle each cookie with a bit of sea salt.

We hosted a formal tea as a fundraiser for the OPWE, and my friend Amanda made these cookies to serve. I have always been hesitant about eating lavender in anything, it just didn't seem right. But when I tried these cookies, I was blown away! You would not have guessed they had lavender in them, yet it's flavor added a special taste that was hard to put your fingers on. Definitely worth a try...who knows, you might become a convert as well!
