9 egg yolks

1 cup sugar
pinch of salt
3 cups heavy cream
1 cup half & half
1 tsp. vanilla extract
sugar for carmelizing
fresh berries and whipped cream for garnish

In a large bowl, whisk egg yolks, eggs, sugar and salt together. In a saucepan, warm the cream and half & half over medium heat until steam rises. Slowly pour the warm cream mixture into the egg mixture; whisking constantly to temper. Strain the mixture into a measuring cup with a pour spout and divide among 12-4 ounce ovenproof ramekins. Arrange dishes in a jelly roll pan, then transfer them to the oven. Add hot water to the pan and bake in a preheated 325º oven for 35 to 40 minutes or until set. Do not overcook. Remove the ramekins from water and chill overnight. Caramelize each custard before serving by burning sugar on top of each one. Note: The easy way is to sprinkle each custard with enough sugar to cover the top. Then use a cooking torch and burn the sugar until it looks caramelized.

Years ago, I became obsessed with Crème Brûlée. For months I searched out and made different recipes. This one was the winner...by far. Every time I make it, it turns out great. I always garnish it with fresh blackberries and raspberries, along with fresh whipped cream. It is "heaven in a custard dish!"
