2 tbsp. butter
1 onion, chopped
1/4 cup flour
1/2 tsp. salt
2 cups milk or half & half
1 1/2 cups water
14 oz. can chicken broth
2 1/2 lbs. cauliflower, cut into 1-inch pieces
1 tsp. Dijon mustard
2 cups shredded sharp cheddar cheese

In a large stock pot, melt the butter. Add chopped onion and cook until golden, about 10 minutes. Stir in the flour and salt; cook 2 minutes, stirring frequently. Gradually stir in the milk, water and chicken broth. Add cauliflower and heat until boiling. Reduce heat to low and cook until cauliflower is tender, about 10 minutes. In a blender, blend cauliflower mixture in small batches until very smooth; return to pot. Remove pot from heat and stir in mustard and 1 1/2 cups shredded cheese until melted and smooth. Garnish the soup with the rest of the cheddar cheese.

We would make this soup for mom quite often. It was very creamy, nutritious and she really seemed to enjoy eating it.
