2 lb. Boneless Chicken Breasts, bite size
2 Tbsp. Olive Oil
1 Garlic Clove, Minced
1/4 Tsp. ground Ginger
1/4 Tsp. or less Red Pepper Flakes
1/4 Cup Apple Juice
1/2 Cup Light Brown Sugar
2 Tbsp. Ketchup
1 Tbsp. Cider Vinegar
1/2 Cup Water
1/2 Cup Gluten Free Soy Sauce
Red Bell pepper
Yellow Bell Pepper, sliced
Orange Bell Pepper, sliced
Cabbage, small sliced
1/2 yellow onion, sliced
2 Tbsp. Arrowroot powder or corn starch
Prepared Brown Rice or Egg Noodles to serve over

Saute' Chicken in Olive Oil until lightly browned & set aside. In small sauce pan, add Garlic, ginger, pepper flakes, apple juice, brown sugar, ketchup, vinegar, water and soy sauce to pot. Simmer over medium heat until incorporated. Add Chicken & simmer 10 minutes. In large skillet add Bell Peppers, cabbage & Onion with 1 cup of water. Cover & simmer until veggies are tender. Separately, in a cup add 1/2 cup cold water and Arrowroot powder. Stir until dissolved & mix into sauce. Reduce heat & simmer for 20 minutes. Pour sauce over veggies & stir to cover veggies in the sauce. Serve
