There are two recipes here. The first one is quick and good, the second one takes a little longer (not a lot longer) and is better (a lot better).
Quick & Good Chicken Pot Pie - 11”x8” 10 min prep 25-30 min bake
2 cps cooked chicken pieces (2 boneless, skinless breasts)
16 oz frozen vegetable mix of your choice I like to use a corn, green bean, pea & carrot mix.
1 jar Heinz Chicken Gravy
1 3⁄4 cp Bisquick
1 egg
2/3 cp milk

Preheat the oven to 375*
Place the frozen veggies in a colander and run warm water over them, toss them gently. Switch to cold water for a minute and then let them sit to drain thoroughly.

In a small bowl mix the Bisquick with the egg and milk. Stirring just till blended. Spray a small casserole dish with cooking spray. (It can also be cooked in 4 smaller single serving dishes, 10-­12 oz size)

Place the chicken chunks in a med bowl, add the drained vegetables and the gravy. Stir this together and spoon it into the prepared pan. Spoon the Bisquick mixture over the filling. Spread it out as evenly as possible. Bake 25-30 min or until the crust is golden brown.

IMPORTANT DO NOT try to dump the Bisquick batter in the middle and spread it out. It will be too thick in the middle to cook through. You must put spoonfuls around the surface, maybe an inch or so apart and spread the globs out till they touch and form a crust..

Slower but a Lot Better Chicken Pot Pie - 16”x10” 25 min prep 25-30 min bake
This still uses the Heinz gravy but by sauteing the onion, garlic and chicken you build layers of flavor and then with a little flour and chicken broth you make the most of that flavor in a sort of gravy concentrate.
2 cps cooked chicken pieces (2 boneless, skinless breasts)
2 sm potatoes, cubed
A handful baby carrots
A handful fresh green beans, cleaned and cut into 2-3” pieces
˝ sm white onion, chopped
2 cloves garlic, minced
2 Tbls butter
˝ cp chicken broth
1 Tbls flour
Salt & pepper to taste
1 jar Heinz Chicken Gravy
2 cps Bisquick
1 egg
1 cp milk

Preheat the oven to 375*
Start a med saucepan of water on the stove. Cut up the potatoes, clean the green beans, chop the onion and garlic. Toss the potatoes and baby carrots in the water and boil 5 min, add the green beans and boil another 5 min.

While that all boils melt 2 Tbls of butter in a 10” skillet and saute the onions for a couple of minutes, add the minced garlic and saute another minute or two, then add the cooked chicken, stir it up, cover and simmer. This will make your precooked chicken extra flavorful.

Remove the chicken onion mixture to a lrg bowl, stir the flour into the drippings and cook on low for a minute to brown the flour a bit - if the pan is to dry add a little butter. Add the chicken broth and simmer 2-3 min so it can thicken up a bit. Add the drained potatoes, carrots & green beans to the bowl with the chicken. Pour the Heinz gravy over all, pour the thickened broth mixture in the skillet over that, give it a sprinkle of salt and pepper, stir well.

In a small bowl mix the Bisquick with the egg and milk. Stirring just till blended. If the mixture is dry add 1 Tbls of milk at a time and gently mix. The mixture should be a little thinner than biscuit dough so it's more spreadable. Spray a casserole dish with cooking spray and fill with the chicken, veggie mix.

Spoon the Bisquick mixture over the filling. Spread it out as evenly as possible. Bake 25-30 min or until the crust is golden brown.

ANOTHER OPTION
A middle ground on this would be to use frozen veggies like the first version but saute onion, garlic and simmer with the chicken followed with making that additional gravy. That one process adds a lot of flavor and doesn’t take very much time or effort.
