6 lb whole chicken
2 cups onions, chopped
4 cups celery, chopped
6 cloves of garlic, minced
4 cups of carrots, sliced
2 bay leaves
¼ tsp salt
¼ tsp pepper
1½ tsp allspice
Water, as needed
Egg noodles, if desired

Directions:
Directions:
Place chicken in a large stock pot and cover with water. Add salt and bring to a rolling boil for 5 minutes. Lower heat and simmer for about 2 hours, adding water if necessary. When chicken is tender and JUST STARTING to come off the bones, remove from water. Strain the liquid and return to pot. Skim any accumulated fat from the surface of the pot.
Remove as much meat as possible from the chicken, chop and return to the pot.
Discard the unused parts. Add the vegetables, garlic and herbs. Add more water to the pot until the veggies, etc are covered. Bring to a rolling boil once more for a couple minutes. Lower the heat cover and simmer for 2 more hours, stirring occasionally. Add additional salt and pepper if needed. Add egg noodles if desired and gently boil until al dente'. Serve!
