"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
4 Tbs butter
4 tsp baking powder
3 eggs
1 cup sugar
dash salt
2 1/2 cups AP flour
1 cup whole wheat flour
1 1/2 cups chocolate chips
1 cup slivered almonds

Directions:
- Preheat oven to 350º. Prepare a large cookie sheet.

- Melt butter in the bottom of a large bowl. Stir in sugar, baking powder, salt, and eggs.

- Add both flours (only AP can be used if you prefer).

- Stir in chocolate chips and almonds (other options: blueberries and lemon juice).

- On prepared baking sheet, form into two logs, about a finger's width high, a hand's breadth wide, and 15" long.

- Bake in preheated oven at 350º for 30 minutes.

- When done, remove from oven and, using a large non-serrated knife, cut into 1" slices. Lay all the slices out on their sides, so that the uncooked centers are facing up.

- Turn oven off and place baking sheet back into hot oven for another 1-2 hours, until crisp.

Personal Notes:
I've been making this recipe 2x/week for three or four years. We eat it at breakfast if we're short on anything else, as a bedtime snack, or often as a mid-afternoon snack. Almonds and chocolate chips are my favorite - I feel like the almonds make them a "healthy" treat, and the chocolate chips make me feel like I'm indulging! They're also fun and easy to make - Copper helps me and we pick at the chocolatey batter once they're all mixed.
I hope this blesses your family for years to come!
