3 boneless, skinless chicken breasts
Olive Oil
1 cup dry bread crumbs
1 teaspoon garlic salt
1 envelope dry onion soup mix
1 teaspoon favorite seasoning or seasoned salt
1/2 cup Parmesan cheese, grated

Directions:
Preheat oven to 425. Cut uncooked chicken breasts into bite-sized pieces. Put in large bowl and drizzle with olive oil. Sprinkle with your favorite seasoning (I use my Mimi's Cajun Seasoning...recipe in Miscellaneous section of this cookbook).
In a gallon sized Ziploc bag, combine bread crumbs, garlic salt, Parmesan cheese and onion soup mix. Put chicken pieces into bag and shake to coat well. Transfer to a large baking sheet sprayed with cooking spray.
Bake in preheated oven for 20 minutes. Serve with favorite BBQ sauce.

I usually pour the dry onion soup mix through a fine-meshed sieve before adding to the mixture. I don't like to use the big, hard pieces of dehydrated onion. It's a matter of taste. It's not necessary.
