5 golden Yukon potatoes, cut into wedges
2 1/2 tsp. olive oil
1 tsp. garlic powder
1 tsp. kosher salt
2 tsp. Italian seasoning
1/2 tsp. black pepper

Directions:
Directions:
Preheat oven to 450 degrees F.

Cover a baking sheet with aluminum foil and then place a baking rack on it.

Slice the potatoes in half (lengthwise), then cut each piece into wedges. (I like thin.) Dry with paper towels.

Place the potato wedges into a large bowl, then all the olive oil, garlic powder, salt, Italian seasonings and pepper (all to taste). Mix well to make sure each wedge is coated with oil and spices.

Arrange the potato wedges in a single layer on the baking rack.

Bake for 30 minutes.

Turn on the broiler and cook for 4-5 minutes until they're well browned and crispy. (Watch closely.)

Cool for 5 minutes and serve.
