Cake:
2 c. flour or 1 box of butter recipe cake mix
2 c. sugar or 1 c. Splenda© (do not add to box mix)
2 tsp. baking powder (do not add to box mix)
1/4 tsp. salt
1 (20 oz.) can crushed pineapple, undrained in its own juice
3 eggs
1 c. chopped walnuts
1 stick butter, melted

Frosting:
2 c. confectioner's sugar
1 (8 oz.) package cream cheese
1 (4 oz.) package instant butterscotch pudding
1/2 c. butter, softened
1 (8 oz.) package coconut
2 Tbsp. milk
1 tsp. vanilla
1 tub Cool Whip©

Directions:
Mix cake ingredients and bake at 350º for 30 minutes in an oblong 13x9 inch baking pan. Mix frosting ingredients; let sit for 30 minutes in the refrigerator. Spread over cake. Keep in refrigerator.
