1/2 lb. Lentils
2 T. Olive oil
2 small Onions - chopped
2 stalks of Celery - chopped
2 cloves of Garlic - minced
4 c.of Vegetable stock
1 bag of Carrots - medium pieces
4 Potatoes - diced
1 package of frozen Spinach
Oregano, parsley, basil, bay leaves, salt and pepper to taste

Directions:
Directions:
Sort and rinse lentils.
Heat oil in a large saucepan.
Stir in onions, celery, and garlic until tender.
Add the remaining ingredients and bring to a boil.
Reduce heat, cover, and simmer until lentils are tender (appropriately 30 minutes).
Serve with Parmesan Cheese and a nice loaf of bread.
