1 medium onion, chopped
4 tbsp. butter
4 boneless, skinless chicken breasts
1 bay leaf
salt and pepper to taste
1 tsp. Greek seasoning
1/2 tsp. nutmeg
1/2 tsp. ground cinnamon
1 cinnamon stick
16 oz. tomato sauce
12 oz. can diced tomatoes, drained
1/3 cup Marsala wine or Madeira
3/4 lb. macaroni or mostaccioli, cooked

Directions:
In a 3-quart pan, sauté onion in 1 tablespoon of the butter. Remove from pan. Heat remaining butter and brown chicken on both sides. Add herbs and spices while chicken is cooking. After chicken is browned, add tomato sauce, chopped tomatoes and onions. Bring to a boil and add wine. Simmer, covered, and allow sauce to thicken for about 30 minutes. Serve over pasta. Note: An equal amount of beef or lamb can be substituted for the chicken.
