16 oz. can diced tomatoes, drained
1 cup onion, chopped
1 cup green pepper, chopped
2 oz. can diced green chilies
2 tsp. salt
1 tsp. sugar
1/4 tsp. garlic powder
1 tsp. fresh jalapeņo pepper, seeded, finely chopped
1 tbsp. fresh cilantro, chopped (optional)
2 tbsp. wine vinegar
1 tbsp. tomato paste
hot sauce to taste

In a bowl with a tight fitting lid, combine all the ingredients above; stir well. Add hot sauce to taste. Refrigerate overnight before serving.

This recipe was given to me by my friend Nellie. It is so simple, scrumptious and has a superior taste to store bought salsa. During the summer, I have made it using half fresh/half canned tomatoes. You can make it as hot or mild as you like depending on the amount of jalapeņo peppers.
