2 tbsp. olive oil
1 cup onion, chopped
2 garlic cloves, minced or 1/4 tsp. garlic powder
16 oz. can tomatoes in juice, chopped
2 tbsp. dry white wine
1/2 tsp. basil, crushed
1/2 tsp. thyme, crushed
1/4 tsp. pepper
1/8 tsp. oregano, crushed
8 oz. swirled macaroni
1/2 to 1 cup pitted ripe olives, sliced
1/2 to 1 cup stuffed green olives, sliced
2 tbsp. grated Parmesan cheese

In 3-quart saucepan, heat oil over medium-high heat. Add onion and garlic, cook, stirring often, 5 minutes or until soft. Add tomatoes with juice, wine, basil, thyme, pepper and oregano. Reduce heat. Simmer 15 minutes or until slightly thickened. Meanwhile, cook pasta according to package directions. Stir into sauce. Simmer, stirring occasionally, 5 minutes. Drain pasta and toss with sauce and Parmesan cheese.

My co-worker Lisa had very little experience in the kitchen. So when she found this recipe in the paper, she decided to surprise me and make it for our lunch. I was amazed at how great it tasted and copied down the recipe. I still make it about every 6 months, and that is after first tasting it 30 years ago!
