Ingredients: 4 large eggs 2 c. milk 1-1 1/2 c. flour 4-5 T melted butter 1/8 tsp. baking powder 2 tsp. vanilla 1 tsp. sugar pinch salt

Directions:Whisk eggs and milk together in a large mixing bowl with a pour-spout. Whisk in flour and all other ingredients to make a smooth, medium-thin batter. (Once you make them you will get the consistency right by adding more flour if batter seems too thin)
Heat a medium non-stick skillet over medium heat. Grease it lightly with butter. (It's good for the pan to be nice and hot when you add the batter.) Pour a small amount of batter in the center of the skillet and tilt it in a circular pattern so that it coats the whole bottom in a very thin layer, like a crepe. Cook it until solid and flip it over. It should be lightly browned on each side. Stack them on the warmed plate. Top them or roll them with syrup, berries of any kind, whipped cream, and a sprinkle of powdered sugar. Enjoy!! |

Notes: I learned how to make these from Mark's mother, Valma when we were first married as one of his family traditions. They are a thin crepe and it's easy to down at least 3-4 of them, so you may need to double the recipe! Grandpa Stohre was known to eat at least 6 of them gently rolled up with sugar. We often had them on a Saturday morning or many times in the evening with sausage or bacon. The grandchildren especially love them with strawberries & whipped cream so the tradition lives on!
