2 C grated zucchini with skin
3 eggs
3/4 C vegetable oil
2 C sugar
3 C flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tbl cinnamon
1 C cranberries (optional)

Directions:

Beat eggs, oil, and vanilla. Add rest of ingredients and mix well.

Pour into 2 greased loaf pans.

Bake 60 minutes at 350 degrees.

Grandma Hyatt made this recipe alot especially when Grandpa Hyatt's garden was producing mid summer. Grandpa loved Grandma's zucchini bread so he always made sure to plant a lot of zucchini plants so Grandma would have plenty for her bread.
