50 -60 large mushrooms
1 lb. Bacon -well cooked and finely crumbled
2 Onions - finely diced
1 loaf Bread - crumbled
1/2 c. Parsley - finely chopped
Mushroom stems - finely diced
1 c. Wine (red or white)
Chicken broth to moisten
Salt & pepper to taste

Prepare mushrooms, wiping clean and removing stems. Sauté bacon, remove and drain. In about 2 T. Bacon fat, sauté onions and mushroom stems until tender. Add remaining ingredients. Mix well. Stuff mushrooms. Place in baking sheet pan greased w/ 2 T. Olive oil.

Bake at 350* about 1 hr. Until mushrooms are tender.

Always a favorite. You can omit the bacon for vegetarians and use vegetable broth instead of chicken broth.
