6 Large Artichokes
2 c. Italian style bread crumbs
1/2 c. Olive Oil
1/2 tsp. Each salt & pepper
3/4 c. Fresh Parsley or 2 T. Dries parsley
3/4 c. Parmesan cheese
3/4 c. Finely chopped black olives
2 or 3 tsp. Finely chopped garlic or 1 T. Garlic Powder

Directions:
Prepare Artichokes taking off outer leaves and slicing off tops and remove stems so that they sit upright. Combine all other ingredients. Spread artichokes and with a small spoon, fill with mixture between all leaves. Sprinkle each w/1 tsp. Olive oil. Place in Dutch oven on a rack w/ 1 - 2 inches cold, salted water. Bring to a boil. Cover pot and simmer for about
1 1/4 hrs. Until fork tender, Adding water, if necessary
May be served hot or at room temperature
