1/2 cup corn meal
1 tbsp. salt
1/2 cup brown sugar or 1/3 cup honey
2 cups warm water
2 packages active dry yeast [2 tbsp.]
3/4 cup whole wheat flour [may add more]
1/2 cup rye flour
4 1/2 to 5 1/2 cup all purpose flour

In mixing bowl combine corn meal salt, water sugar. add rye flour and Yeast, mix, add whole wheat and enough all purpose flour to form a stiff dough, turn out onto floured surface, knead until smooth and elastic, about 6-8 minutes. Place in greased bowl and cover, let raise in warm place until doubled, punch down, let rest, bake @ 375º 35 to 40 minutes
