1/2 c. softened butter
1 1/2 c. sugar
3 large eggs
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1/2 c. sour cream
1 c. shredded zucchini
1 tbsp. lemon zest
2 tsp. poppy seeds

Directions:
Directions:
Cream butter and sugar well. Add eggs and sour cream. Add dry ingredients. Mix well then add zest, zucchini, and poppy seeds. Spoon batter into 3 greased and floured 3x5 loaf pans (about 1 1/3 c. in each pan). Bake at 325º for 35 to 40 minutes or until a wooden pick comes out clean. Cool in pans or rack.
