Large zucchini, slice rounds ¼ inch thick
Salt and pepper
Marinara sauce
Shredded mozzarella
Mini pepperoni pieces or any topping you want
Italian seasoning, for sprinkling
Oil
Directions:
Directions:
Oil both sides of zucchini rounds. Place on cookie sheet and sprinkle with salt and pepper. Broil zucchini rounds for 2 minutes on each side. Top with small amounts of sauce, cheese and pepperoni pieces. Broil for an additional 1-3 minutes, or until cheese is melted. Sprinkle with Italian seasoning and enjoy.
