1 lb. lean ground beef
1 onion, diced
Minced garlic
4 medium carrots, diced
Mushrooms, diced
2 small zucchini, diced
1 small can tomato paste
1 small head cauliflower
1 can Cannellini beans
Cheddar cheese
Directions:
Directions:
Brown lean ground beef with onion and garlic add diced veggies carrots and mushrooms and zucchini and one can of tomato paste and equal amount of water and cook until tender.while that's cooking steam cauliflower then mash with one can of cannellini beans, put sauce mixture in a 9x13 baking dish and top with cauliflower mixture and bake at 20 minutes then shred cheese on top and bake 5 more minutes. Then enjoy.
