2 cups creamy peanut butter
2 cups brown sugar, firmly packed
2 eggs
2 tsp. baking soda
1 cup coarsely chopped cocktail peanuts

Directions:
Directions:
In a large bowl, beat peanut butter, sugar, eggs and baking soda with an electric mixer for 2 minutes or until smooth. Stir in chopped peanuts. Drop level tablespoons onto parchment-lined cookie sheets. Bake in a preheated 350º oven, one sheet at a time, for 10 minutes or until cookies are puffed and slightly golden. Cool 5 minutes on the baking sheet; remove to wire racks to cool completely.

This recipe was given to me by my receptionist at work. She claimed they were the most delicious cookies in the world! Her mother used to make them and no one would believe they did not contain any flour. I only know that every time I make them, they disappear without any questions!
