1 - 1/2 cups sugar or Splenda
3 eggs
1 cup oil
1 - 1/2 tsp. vanilla
2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 to 3 apples, chopped, (I grate mine)
1 tsp. cinnamon
1 cup chopped nuts, (walnuts or pecans)

Directions:
Directions:
Mix together sugar, eggs, oil and vanilla in a large mixing bowl. Set aside.
In another bowl combine flour, baking soda, salt and cinnamon. Stir in sugar mixture until smooth.
Fold in apples and nuts. Pour into a greased and floured 13 x 9 inch pan or bundt pan.
Bake at 375º F for 40 minutes.
Garnish with powdered sugar.
