3 cups cold mashed sweet potatoes (prepared without milk or butter)
1 cup sugar
1/2 cup milk
1/4 cup butter, softened
3 eggs
1 tsp. salt
1 tsp. vanilla extract

Topping:
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/4 cup flour
2 tbsp. cold butter
Directions:
Directions:
In a mixing bowl, beat sweet potatoes, sugar, milk, butter, eggs, salt and vanilla until smooth. Transfer to a greased 2-quart baking dish. Topping: In a small bowl, combine brown sugar, pecans and flour; cut in butter until crumbly. Cover sweet potato mixture with topping. Bake uncovered in a preheated 325º oven for 45 to 50 minutes or until golden brown.

This is a great side dish for the holidays and you can even make it a day ahead of time. In a pinch, I have used 2 large cans of sweet potatoes in light syrup and cut the 1 cup of sugar to 2/3 cup to adjust the sweetness. Even the kids seem to like their vegetables with this recipe!
