1/2 lb. bacon, chopped
2 green onions, chopped
3 oz. fresh baby spinach
4 large eggs
3/4 C. milk
1/8 tsp. salt
1/8 tsp. nutmeg
1 1/2 C. shredded Swiss cheese
1, 9" unbaked pie shell

Preheat the oven to 400º and partially bake the pie shell for 8-10 minutes. Remove and set aside, reduce the oven temp. to 325º.

In a skillet, brown the bacon until crisp, remove and drain on a paper towel. Reserve 1T. of the bacon grease and sauté the onion and spinach until the spinach has wilted. Remove from the heat. In a bowl, whisk together the eggs and milk, add the seasonings, spinach and onion, bacon and cheese. Pour into the pie shell and place on a baking sheet that has been lined with tinfoil. Bake for 50-60 minutes or until the center has set. Let rest 5 minutes before serving.
