1 medium head cauliflower, broken into florets
2 carrots, shredded
1/2 cup chopped celery
1 small onion, chopped
3 cups chicken or vegetable broth
3 tablespoons butter
3 tablespoons flour
3/4 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup shredded cheddar cheese
1/2 teaspoon hot pepper sauce, optional

Directions:
Directions:
In large sauce pan, combine the cauliflower, carrot, celery, broth and bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender (do not drain).
In another large sauce pan, melt butter, stir in flour, salt and pepper until smooth. Gradually add milk. Bring to boil over medium heat, cook and stir for 2 minutes or until thickened. Reduce heat; stir in the cheese until melted. Stir into the cauliflower mixture and serve.
