Ingredients: 4 eggs, separated 1/4 tsp. cream of tartar pinch of salt 3/4 cup sugar 6 oz. semi-sweet chocolate chips 1/2 cup butter 1/4 cup rum 1/4 cup strong coffee (optional) whipped cream

Directions:Separate the egg whites and yolks into 2 medium bowls. Beat the egg whites with cream of tartar and salt until stiff; set aside. Beat the egg yolks until pale, about 3 to 4 minutes. Add sugar and beat well for another 2 minutes. In the microwave, melt the chocolate chips and butter. When melted, add the rum and strong coffee; mix well. Cool slightly, then add the chocolate mixture into the egg yolk mixture; beat well. Slowly add the mixture into the beaten egg whites; folding gently to well-incorporate. Pour into a serving bowl and refrigerate overnight. Serve with a dollop of whipped cream on top. |

Notes: One of dad's foreign students relocated to Chicago and married his fellow classmate. They would invite our family over for dinner every couple of months. He would cook dinner and his wife would make dessert; she hated to cook. This chocolate mousse recipe was handed down from her German grandmother. We all loved how smooth and silky it tasted, so Mom was ecstatic when she decided to share the recipe with us!
