3 cups flour
1 1/2 tbsp. baking powder
1 tbsp. ground cinnamon
1 tsp. ground ginger
1 tsp. baking soda
1/2 tsp. salt
3 cups of bran flakes, crushed well to equal about 2 cups
4 eggs
1 1/4 cups brown sugar, firmly packed
1 1/2 cups oil
1/4 cup molasses

3 cups carrots, grated
1 cup flaked coconut
1 cup raisins
1/2 cup walnut pieces (optional)

Directions:

In a large bowl, mix the first 7 dry ingredients. In another bowl, combine the eggs, brown sugar, and molasses. Add to the dry ingredients; mix well. Then add the carrots, coconut, raisins and nuts; incorporate lightly with a spoon. Put the mixture into 24 paper-lined muffin pans. Bake in a preheated 350º oven for 25 minutes or until they feel firm to the touch.

These great muffins are not only delicious, but are full of healthy bran and carrots. They are very moist, unlike some bran muffins you can barely swallow. They freeze well and if you take one out of the freezer the night before, you'll have the perfect "breakfast to go" in the morning!
