5 large eggs
2 tsp. vanilla
1 1/2 cups vegetable oil
1 1/2 cups granulated sugar
5 cups sifted flour
5 tsp. baking powder
Fruit preserves: strawberry, apricot, blueberry, etc. "Solo" brand if possible

Directions:
Whisk the eggs together with the vanilla; add sugar, and whisk again for several minutes until the mixture is smooth. In another bowl, sift the flour and baking powder together. Blend the dry ingredients into the egg mixture with a spoon and beat until a stiff but pliable batter forms (if batter is too sticky, add additional flour until a stiff consistency is achieved). Refrigerate dough in a plastic bag for one hour.
Preheat oven to 350º. Generously grease mandolin or fluted cookie tart molds. With a heaping teaspoon of dough, form a ball in your hands, then flatten it into and line the tart mold like a pie crust, being sure the dough is solid.
Add one teaspoon of preserves into the cookie dough crust. Form another piece of dough (slightly smaller) and place over the tart like a pie crust.
Bake for 10-15 minutes or until golden brown. Cool and remove from molds. Sprinkle with powder sugar.
