Holiday Turkey Recipe

1 20 lb. or larger turkey (thawed)
salt
spray oil
2-3 pats of butter
Heavy duty aluminum foil

Directions:
Remove neck and giblets.
Wash turkey thoroughly inside and out.
Pat dry with paper towels.
Sprinkle salt in both cavities.
Double the width of your aluminum foil by tearing 2 same size strips and folding it together along the seam, making it double wide.
Spray with oil.
Place your turkey on the foil.
Now is the time you would put stuffing inside if you wanted it stuffed.
Place the butter pats between the skin and meat on the top of the turkey.
Wrap the foil not too tightly but definitely sealed.
Place in an oven roasting pan deep enough to contain the drippings.
Bake at 400º approximately 4 hours or until tempereature is 170º.
Remove the liquid with a turkey baster.
Fold back foil to brown.
Remove from oven and allow it to rest before carving.

My mother used to remove the giblets and neck and boil them. She often made 2 types of stuffing and put one kind in the larger cavity and the other in the back cavity. She would use the giblets (cut up) in 1/2 the stuffing (also adding ground cooked sausage and mushrooms) and the neck meat in the gravy. I also remember her filling one cavity with wild rice one year.
I fill the turkey with one kind of stuffing because it's a favorite and I toss the neck and giblets. Just can't do it.
