1/3 C. vegetable or canola oil
2 medium yellow onions, finely diced
1 large green bell pepper, finely diced
2 celery stalks, diced
1 16-oz. can whole peeled Italian plum tomatoes
1 c. tomato puree
Generous pinch cayenne pepper
Generous pinch dried basil
2 garlic cloves, mashed with 1 tsp. kosher salt
2 bay leaves
Salt and black pepper
2 Tbsp. curry powder
Seafood stock
3 lbs. shrimp, peeled
White rice, for serving

Directions:

Heat the oil over medium heat in a large heavy saucepan. Add the onions, bell pepper, and celery; cook until soft, stirring occasionally. Add the tomatoes, cayenne, basil, garlic, bay leaves, salt, and black pepper. Bring to a boil over high heat, and add the curry powder. Turn down the heat and simmer for about 25 minutes. If sauce seems too thick, add a little stock or water. Add the shrimp and simmer for about 10 minutes, until just cooked through. Remove the bay leaves.

Serve over cooked white rice.
