Ingredients:  
- 2 cups pastry flour OR 1 2/3 cups all purpose flour
- 3 tsp baking powder
- 1 tsp salt
- 1 1/2 cup sugar

- 1/2 cup canola oil
- 5 egg yolks/whites (divided)
- 3/4 cup water
- 1 tsp vanilla
- 1 tsp maple flavor
- 1/2 cup walnuts (chopped)

- 1/2 tsp cream of tartar

Directions:

Sift first 4 ingredients into a large bowl

Beat next 5 ingredients together, then add to dry ingredients and add walnuts.

Beat 1 cup egg whites and 1/2 tsp of cream of tartar. Add batter to whites and fold carefully.

Bake for 1 1/4 hrs at 350ºF. Ice with maple icing.
