3/4 cup of flour
1 medium chopped onion
1 tbsp. olive oil
2 lbs. of meat (combination pork, beef and veal)
1/2 tsp. of cinnamon
1/2 tsp of nutmeg
1/2 tsp of ground cloves
6 cups of beef stock

Directions:
Directions:
1. Brown flour in a large skillet over low heat stirring frequently. Set aside.
2. Saute onions in olive oil until translucent.
3. Combine cooked onions, ground meat and seasoning and mix well.
4. Form into small meatballs approximately 1 1/2 inches in diameter.
5. Heat Beef stock to boiling. Drop meatballs a few at a time into the boiling stock. Decrease
the heat to simmer and continue cooking for approximately 1 1/2 hours until the meatballs
are fully cooked. Use a cover slightly open to allow for the venting of steam.
6. Sprinkle the browned flour slowly, stirring constantly until the gravy is thickened.

This was one of our favorite Memere recipes. She would serve this over boiled potatoes. The aroma of the toasting flour can bring me right back to my Grandmother's kitchen and to her very familiar apron.
