- 1 cup dry bow-tie pasta
- Purple onion, sliced thinly, to taste
- Half an English Cucumber, cut into chunks
- 3 to 4 Roma tomatoes, cut into chunks
- 2 red, orange or yellow peppers, cut into chunks
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- 1 cup (or half a can) of chickpeas rinsed and drained
- 1/2 cup chopped flat-leaf parsley
- Balsamic vinaigrette, to taste

Directions:

Cook the pasta, rinse with cool water to stop the cooking and drain well.

In a large bowl, toss together the pasta, vegetables, olives, feta, chickpeas, parsley and vinaigrette to taste

Keep chilled until ready to serve and toss again just before serving
