- 1/2 cup quinoa
- 1 small head cauliflower, roughly chopped
- 2-4 cups prepared coleslaw (half a bag)
- 1 cup (half a can) of cooked chickpeas or white beans
- 1 apple, cored and chopped (optional)
- 1/2 cup crumbled feta cheese
- ground black pepper, to taste

Dressing:
- 1/4 cup olive oil
- juice of 1 lemon
- 2 tbsp rice, white wine, or white balsamic vinegar
- 2 tsp sugar or honey
- 1 tsp grainy mustard

Directions:

Rinse quinoa well under cool water in a fine sieve, then cook in a pot of boiling salted water over medium heat until tender, stirring occasionally, about 15minutes.

Drain well, return it to the pot, put the lid back on and let it steam.

Once cool, transfer the quinoa to a bowl and add cauliflower, coleslaw, beans, apple, and feta, and sprinkle with pepper.

In a small bowl or jar, whisk or shake together the dressing ingredients.

Drizzle the salad with dressing and toss to coat.
