1 bag pearl onions, cleaned
3 zucchini, sliced
1 squash or 3 sweet potatoes, quartered
carrots, sliced thin
4 cloves garlic, minced
1 cup pure maple syrup
1/4 cup balsamic vinegar
salt/pepper
olive oil
feta cheese

Directions:
Directions:
Preheat oven to 375º

Toss veggies with olive oil, garlic, salt and pepper. Put in greased roasting pan
Roast veggies for 45 minutes. After 45 minutes, raise temp to 425º for 20 minutes

While veggies roast, combine syrup and vinegar in sauce pan and bring to boil.
Once boiling, lower heat and simmer until reduced (about 15 minutes).

Once sauce is done, add to veggies and bake for another 5-10 minutes.
Serve warm with sprinkled feta cheese.
