Ingredients:  
• 1 stick butter
• 2# boneless chix breast (approx. 8 breasts) cubed 1/4-1/2” pieces
• 1/4 cup flour
• 1 large onion, chopped
• 1 whole red pepper (can use half red & half green)
• 1 & 1/2 containers of chicken stock (48oz total)
• 1 pint heavy cream
• 2 tbls. chili powder
• 1 tsp. ground cumin
• 1 tsp. cayenne pepper
• 1 tbls. black pepper
• 1 tbls. salt
• 4 cans cannellini beans drained
• 1 7oz. can mild green chiles
• Cheddar cheese & sour cream for garnish

In a large dutch oven (1 large pasta pan will do), spray with pam and melt butter over medium heat. Brown chicken pieces until nicely colored and cooked through. Remove chicken to a large bowl and set aside.

Using the same dutch oven, stir in the flour. *This will create a roux. Stir in the onions and peppers. Add the chicken stock to deglaze the pan and stir in the heavy cream. Lower heat and cook until the mixture thickens, about 5 minutes. Once the sauce has thickened, (will not be real thick/similar to a cream soup); add the chili powder, cumin, cayenne, black pepper and salt. Stir and cook for a few minutes. Add the cannellini beans, chiles and chicken and simmer for another 6-8 minutes.

*I mix flour with chicken broth first and strain into dutch oven. This will avoid any flour chunks.

This will be very spicy for kids. Sour cream will tone down the heat.
