12 medium sized Jalapenos
1- 16 oz package of bacon
1-8 oz package cream cheese

1)Preheat oven to 375 degrees. Line a baking sheet with aluminum foil and spray lightly with non-stick cooking spray.
2)Rinse jalapenos and dry with paper towel. Cu off stems and slice each jalapeno in half lengthwise.
3)Use a spoon to scrape out the ribbing and seeds from each jalapeno (if you want some extra heat, you can leave in some of the ribbing)
4)open package of bacon and cut all slices in half.
5)Use a butter knife to fill each jalapeno half with cream cheese, smoothing the top flat.
6)Take one half slice of bacon and beginning at the wide end of the jalapeno, wrap the bacon around the jalapeno making sure to cover the wide end with bacon. Poke toothpick through the jalapeno to secure the bacon in place. (Note: you may need to pull the bacon gently to stretch it a bit so it will fit around the jalapeno)
7)continue with 5 and 6 until all jalapeno halves are filled, wrapped, and secured with a toothpick.
8)place all jalapeno halves on the baking sheet about 1 inch. apart.
9)Bake on middle oven rack for approximately 25 minutes, checking often until bacon is sizzling and crispy.
10)Remove backing sheet from oven and remove toothpicks prior to serving.
*You may want to wear gloves while handling the raw jalapenos
