1 lb. jicama (cut into approximately 3 cup matchsticks)
1/2 small red onion (sliced thinly)
2 small cans mandarin oranges (drained)
3/4 cup chopped cilantro
1/2 cup Feta crumbles
Vinaigrette: Food process together 1 tsp. minced garlic, 1/4 cup key lime juice, 6 tablespoon, extra virgin olive oil, 1/2 teaspoon sugar, 1,2 teaspoon salt and 1/2 teaspoon pepper.

Just before serving, toss vinaigrette with all other ingredients.
