1 large onion, chopped
4 teaspoons cooking oil
3 tablespoons flour
2 cups asparagus, cut up (can substitute with broccoli or cauliflower)
2 cups milk
1 can (14 oz) chicken broth
8 oz cubed potatoes (about 1-1/2 cups)
1/4 teaspoon salt
1/8 teaspoon red pepper flakes
1 cup shredded sharp cheddar cheese

Directions:
Directions:
In a large saucepan cook onion in oil over medium heat until tender. Sprinkle flour over and and stir to coat. Add the asparagus, milk, chicken broth, potatoes, salt and red pepper. Cook and stir until thickened and bubbly; reduce heat and simmer covered for 10-12 minutes or until vegetables are tender, stirring occasionally. Add cheddar cheese, stir until cheese is melted.
