1 1/3 c. raw wild rice
1/4 c. olive oil
1/2 tsp. dried oregano
1 clove garlic, minced
1 tsp. salt
Freshly-ground black pepper
2 tsp. lemon juice (to taste)
6 tbsp. dry white wine
24 large raw shrimp, peeled
4 tbsp. butter melted

Directions:

Cook wild rice according to directions (use 5 cups water); drain. Add oil, oregano, garlic, salt, pepper, lemon juice and wine to the rice. Turn into a 1 1/2 quart shallow baking dish. Bake uncovered, at 350º for 30 minutes, stirring 2 or 3 times. Heat butter in skillet and add the shrimp; toss until cooked and hot. Turn shrimp onto wild rice mixture. Bake 10 minutes longer, uncovered. Serve warm.

I think I have made this with white meat chicken also for those who may not care for shrimp or are allergic to it. It comes from wild rice cookbook. Last time I made it (with shrimp), it made my gout flare, but it was worth it!
