1 cup sugar
pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup walnuts, finely chopped
For filling:
8 oz. Philadelphia cream cheese
1 1/3 c. powdered sugar
5 T. margarine
1/2 tsp. vanilla
Beat smooth

Directions:
Directions:
Beat 3 eggs on high speed of mixer for 5 minutes; gradually beat in 1 c. granulated sugar. Stir in 2/3 c. pumpkin and 1 tsp. lemon juice. Stir together 3/4 c. flour, 1 tsp. baking powder, 2 tsp. cinnamon, 1 tsp. ginger, 1/2 tsp nutmeg, 1/2 tsp. salt. Fold into pumpkin. Spread in greased and floured 15"x10"x1" pan. Top with 1 c. finely chopped walnuts.

Bake at 375º for 15 minutes. Turn on towel sprinkled with powdered sugar. Starting at the narrow end, roll towel and cake together; cool. Unroll. Fill. Spread some filling over the cake roll. Chill.
