1/2 Lb Mushrooms
3 T Butter
1 T Vegetable Oil
3/4 C Chopped Onion
2 T Bread Crumbs
Salt & Pepper
1/2 t Crumbled Sage or Poultry Seasoning
4 Boneless Chicken Breasts Pounded
1 T Flour
1/2 PLUS Cream or Half & Half [It thickens quickly hence the extra cream]
1/3 C Dry White Wine
1 T Minced Parsley
1 Clove Garlic Minced

Preheat oven to 375. Chop half mushrooms. Slice the remainder.

In medium frying pan, melt 2 T butter in 1 T oil over medium heat. Add 1/2 c of the onion and saute 3 minutes. Add chopped mushroom and cook until beginning to brown. Remove from heat and stir in bread crumbs. Season with salt, pepper and sage.

Spread filling over chicken breasts. Fold sides of chicken over stuffing and secure with wooden toothpicks. Arrange in Foil-lined 8x8 baking dish.

Cover dish with foil and bake 15 minutes. Uncover and bake 10-15 minutes, until chicken is tender but still moist.

Meanwhile in a medium saucepan, melt remaining 1 T butter over medium heat. Add remaining onion; cook 2 minutes. Add sliced mushrooms to pan; cook 3 minutes. Stir in flour and cook, stirring. Gradually blend in cream ad wine until smooth. Bring to a boil and cook, stirring until thick...this is where you may need additional cream...Season with salt and pepper to taste. Remove wooden picks from roulades and spoon sauce on top. Garnish with parsley.
